Halloween: Orange and Black Bean Pie

Halloween black bean pie: Try black bean pie with a jack-o-lantern face.

Black Bean Pie

1 pie shell
1 can black beans with liquid
1 cup onion, chopped fine
1 cup orange bell pepper, chopped
1 cup peeled butternut squash, peeled sweet potato or carrot, diced
1/2 tsp salt
1/2 tsp ground black pepper
Sliced carrot or sweet potato

Chop and dice vegetables. Mix all ingredients except sliced carrot or sweet potato. Pour into pie shell and bake in 350 degree oven for 30 minutes.

Carve sliced carrots or sweet potato in triangular nose and eyes. Carve a few teeth shapes. Frozen corn kernels also make good teeth shapes. Place on top of pie to make a pumpkin face before serving.
